Curry Potatoes
Ingredients
- 2 Tablespoons oil
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon crushed rosemary
- 1 large potato, cut into 1/2-inch cubes
- 1 carrot, cut into 1/2-inch semicircles
- 2 teaspoons curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water
- 1 Tablespoon butter
- 1 Tablespoon chopped chives
Directions
Heat the oil in a large pan over medium heat. Fry the onions for until soft and translucent. Add the garlic and rosemary, and fry for another minute.
Add the potatoes, carrots, curry powder, salt, and pepper to the pan and stir to mix well. Press the potatoes and carrots into a single layer, then add the water and cover with a lid. Leave for five minutes.
Add the butter, and cook another 15 minutes, stirring occasionally. Stir in the chives and remove from the heat.
